I actually have a PhD from MIT and have been employed from the last 15 years as a professor in England; I just sent my CV because I've been searching for something closer to my husband's new job at Princeton. So I suspect the "I don't normally do this" means that it's a scam. There's a website associated with the email http://thomasandhunt.com/ but otherwise no record of this company I can find from Googling, and there's no information on the website about who runs the company, or indeed any of its employees.
Right now there's no damage done except wasting my time. I haven't written her back again. If you want me to see where this leads I could email her back, but I'd only do that if you thought it was worth my time.
